Despite many setbacks, mostly epidemics, the poultry-processing sector has been very innovative in recent decades. Whereas whole chickens were deep-frozen 20 years ago, today the approach is to have a wide variety of fresh chicken products. Who hasn’t seen chicken filets, wings, drumsticks, fingers, nuggets, satés or schnitzels. Traditional variations have made the chain much longer, and the added value has grown enormously. This places higher demands on shelf life. Increasing competition, especially from the Far East and South America, require more chain management to increase quality.
Our poultry-farming customers know only too well the importance of having the correct temperature in the processing chain. However, the cooling of slaughtered poultry also causes dehydration. Our staff know exactly how climate control can maintain the required air-conditioning in processing areas and spray tunnels for fresh or frozen products.
